Evensong’s young herd of pasture-grown cattle is humanely raised through the natural, traditional grass-only techniques of rotational grazing. Built upon the gentle Red Devon breed – brought to the New World by the Pilgrims – our cattle are naturally suited for our land and our climate, and are marvelously proficient at trimming and harvesting our pastures, and growing healthy and tasty from it. As a pasture-raised herd, our cows, calves and steers are regularly moved to fresh grass paddocks, so that their focused foraging maximizes their life-giving impact on the soil and evenly disperses what they leave behind, and most importantly, provides them with a constant, healthy diet of ripe green plants packed with nutrients. And, because our herd never eats grains – an input unnatural to ruminants’ diets but one that is the foundation of modern, bigger-is-always-better livestock production – their meat is lean, naturally marbled, and high in Omega 3s, cholesterol-fighting CLAs, and essential vitamin E. The old wisdom is certainly true: You are what you eat. And grass-fed cattle are healthy, and healthier for you, than factory-grown, grain-bloated beef.
