In 2011 Evensong Farm began a collaborative adventure with renowned Chef Pedro Matamoros. Using meats from Evensong Farm, Chef Matamoros and his team at the fantasic 8407 Kitchen Bar in Silver Spring, Maryland, are making incredible charcuterie and other culinary creations. Some items that our customers have enjoyed include- Country Style Terrine, Pork Belly Pastrami, Tuscan Salami, Chicken Sausage with Sundried Tomatoes and Basil, Andouille Sausage, Lomo and Coppa. It is an ever changing menu of specialty items, made with great care and artistry.
